In this 2-hour online class, Chef Divya Alter will guide you through a restorative Ayurvedic meal reset for deep winter. We’ll cook with humble pantry staples, winter vegetables, and healing spices to create dishes that replenish your energy, support digestion, and bring comfort without heaviness.

Millet Kitchari A deeply grounding, high-protein winter kitchari that nourishes while feeling wonderfully light. Foxtail millet has a natural scraping effect that helps remove excess heaviness from holiday eating, supports healthy metabolism, and keeps you full without sluggishness. Paired with mung dal, it becomes a nourishing, complete, balanced meal that is gentle on digestion.
Carrot–Ginger Soup with an Ayurvedic Twist Bright, comforting, and easy on the gut. Carrots strengthen the liver and build good quality blood; ginger wakes up agni without overheating; and the Ayurvedic seasoning blend turns a simple soup into a winter digestion ally. The perfect light dinner.
Sautéed Fennel with Leafy Greens Rich in fiber, vitamins, and minerals, this side dish (or kitchari topping) delivers your daily dose of vegetables. Fennel supports digestion, reduces bloating, and helps the mind feel more grounded. Paired with leafy greens, it offers gentle detoxification and brings a welcomed lightness that counteracts post-holiday sluggishness.
Cilantro–Almond Chutney Cilantro is known in Ayurveda for helping draw out heavy metals and cooling mild internal inflammation, while soaked almonds provide protein, healthy fats, and sustained energy. The result is a creamy, vibrant sauce that elevates any winter meal.
Baked Papadam A fun, zero-oil technique using dry hot salt to achieve the perfect crisp. A playful, healthier alternative to frying—light, crunchy, and ideal for pairing with kitchari.
