The Ayurvedic Nutrition and Culinary Training (ANACT) is the first of its kind in North America. Take part in this rare opportunity to learn to cook with simple yet specific techniques and ingredients. You will create delicious meals that produce tangible healing benefits for the body and mind. Join us for a comprehensive, life-changing culinary experience!
This training is offered across two courses:
Foundations is suitable for anyone who wants to learn how to cook and eat according to the principles of Ayurveda. This includes professional health-focused chefs, home cooks, Ayurvedic consultants and practitioners, yoga instructors, and students of Ayurveda who wish to apply healthier food and digestion principles to their practice.
Professional* is a continuation of Foundations and is appropriate for those who want to incorporate Ayurvedic nutrition and food principles into their occupation. This includes working at a food service establishment, starting a business that focuses on wellness through healthy food, caregiving for mothers during birth and postpartum, working in holistic healthcare, writing cookbooks, professional recipe testing, and more.
Students may choose to complete ANACT Foundations only or complete both Foundations and Professional.
ANACT Foundations is a prerequisite to registering for ANACT Professional.
The training is vegetarian (no meat, fish, or eggs), and it can accommodate students with dairy-free and gluten-free needs. If you have other specific dietary requirements, please reach out to our staff upon registering to learn if your needs can be met.

Foundations
Course Objectives:
Select balancing ingredients and prepare them to create delicious Ayurvedic meals for family and friends
Be familiar with the history of Shaka Vansiya (SV) Ayurveda and modern Ayurveda as described in the ancient texts and as it particularly relates to food and healing in our day and age; definition of health and healthy food
Understand prana and human physiology according to Ayurveda (3 doshas, 7 tissues)
Gain perspective of the spiritual aspects of cooking and consciousness
Comprehend the energy-balancing properties of foods and spices based on their taste, potency, post-digestive effect, and unique healing benefits (five properties)
Understand the four types of digestion and know the ingredients that support the balance of each type
Understand the role of friendly gut bacteria and its relation to strong immunity and brain function
Mitigate the harmful consequences of toxins and bad eating habits
Identify and select ingredients according to their biochemical and bioqualitative properties; know which to use and avoid in daily consumption
Learn Ayurvedic food compatibility guidelines
Create healthy home meal plans
Gain insight to the future of Culinary Medicine, envisioning how doctors can work with chefs to support their patients and build a healing team
Be competent in selecting high quality ingredients and appropriate storage methods
Properly use appropriate kitchen equipment
Comprehend the importance of spices, including healing benefits, dosha effects, and cooking methods
Practice basic knife skills
Understand the effects that various cooking methods have on the body and mind
Acquire skills and techniques to prepare Ayurvedic staples and basic recipes
Adapt and transform everyday dishes, and other styles of cuisine, into health-supportive Ayurvedic meals
Format:
Four distinct modules
All classes are held online, via a learning implementation platform and Zoom
24 live lessons with accompanying Q&A sessions, office hours, and small group study and social time
For an optimal learning experience for all, we highly encourage regular attendance during the live classes. If, however, you are unable to attend live, the classes will be recorded so you can watch them at a later time.
Some classes will be primarily content and theory while others will be primarily active through observing a demonstration and/or participating alongside the teacher with your own equipment and ingredients at home.
Weekly readings and practical tasks are assigned to increase your understanding of theory and solidify your integration of skills.
Demonstrate your learning through informal and formal assessments.
Through the learning implementation system, you will be able to
introduce yourself and continually engage with peers,
participate in group discussions/forums,
complete and submit assignments,
access a comprehensive library of class content, recipes, and photos, and
browse supporting resources.
Professional
ANACT Foundations is a prerequisite to registering for ANACT Professional.
